months then I started having symptoms after ordering it a couple times
and I had to just stop.
I miss pizza so fucking much, you guys. I didn’t even *like* pizza before I got my diagnosis but now sometimes I literally dream about it.
Though I will point out that *none* of this is as annoying as the Panera “Gluten Conscious” line of foods, most of which have oats that are *not* certified g-free as their first ingredient.
Like. That’s not gluten-free. There ARE gluten-free oats out there. They exist. But you didn’t use them. Because this isn’t for people who have celiac. This is for people who are *gluten conscious*

this not false advertising though? If a person with celiacs orders the
gluten-free item on the menu and gets sick from the gluten in it, is
that not a lawsuit?
Nope,
because they stick a tiny footnote on it that says “please note our
kitchens are environments that use gluten-containing ingredients, we
cannot guarantee our products are gluten-free"
Here’s the exact disclaimer from Dominoes:
“Domino's® pizza made with a Gluten Free Crust is prepared in a common kitchen with the risk of gluten exposure. Therefore, Domino's® DOES NOT recommend this pizza for customers with celiac disease. Customers with gluten sensitivities should exercise judgment in consuming this pizza.”
And it shows up on all the ads for the gluten-free crust and the crust itself is actually gluten-free so nope, not false advertising.
Which is actually part of what’s frustrating - I’d bet that some dominoes out there actually do handle the crust well enough and safely enough with enough consideration for cross-contamination that I *can* eat it. But a lot of dominoes don’t because they don’t have to because of the cover-your-ass disclaimer that exists to prevent lawsuits.
It’s the same thing for all restaurant food in the US unless you’re in a totally g-free place.
Here’s Denny’s disclaimer: Menu items marked as GF meet the FDA specified definition of less than 20 parts per million for a gluten free claim. Please note that our restaurants are not set up as a strictly gluten free environment.
Here’s the awful panera explanation: These menu items contain oats which carry a ‘may contain wheat’ allergy advisory statement due to the cross-contact that may result from customary methods of growing and harvesting crops, as well as from the use of shared storage, transportation or product equipment.
Apparently Chik-fil-a (fuck chik-fil-a) is now offering gluten-free sandwiches and they’ll give you the bun separate to make your sandwich yourself but they don’t make any promises about their kitchens: While individually packaged and certified free of gluten, guests will be required to assemble their own sandwiches to reduce risk of cross-contamination. Chick-fil-A kitchens are not gluten-free.
And look. Look. I know, okay? I know how fucking hard it is to keep things separate and to reduce cross contamination.
But for real like the panera bread thing infuriates me because half of the stuff they list is prepackaged. You could have loaves of g-free bread or bags of g-free cookies shipped to your store and not worry about cross contamination. You could have individually packaged containers of g-free soups or salads.
But this shit gets *infuriating* because there’s a difference between “your food was heated in an oven that also had gluten-containing foods on a separate rack” (something I don’t worry about) and “the dough for your food was rolled out on the same surface where we roll out everything and we floured the surface and the rolling pin with wheat flour” (something that I would worry about a lot and would make me really sick thanks a fucking bunch dominoes).
Do you have a dedicated cutting board and knives and utensils for allergens? Do your cooks know to use allergy-safe extras (like rice flour instead of wheat flour to keep dough from sticking, or to thicken a sauce)? Are hands washed and/or gloves changed between allergen-containing and allergy-safe plates? Honestly that’s good enough for me (it’s the standard I keep to in my own kitchen with my family who can and do eat gluten). But that kitchen still has to make the “we don’t have a gluten-free kitchen” disclaimer and that is fucking *meaningless* when I know that Dominoes has the same disclaimer but doesn’t have dedicated tools or Panera just straight doesn’t give a fuck about gluten-containing ingredients.
